Vegan, Gluten-Free and low FODMOP… we’ve got you all covered with these chocolate salty peanut balls. Easy peasy, only 5 ingredients and THEY TASTE INCREDIBLE!

Yields: 22 balls
Prep time: 30 minutes plus extra time for chilling between steps
Ingredients:
- 35g vegan spread (I used Violife spread)
- 125g all-natural peanut butter
- 150g coconut sugar
- 1 cup gluten-free (low-FODMAP) crisped rice cereal
- 150g dark chocolate
Directions:
- Beat vegan spread, peanut butter and sugar in large mixing bowl until creamy
- Add rice cereal and combine
- Place bowl in refrigerator and chill until cold (About 45 minutes)
- Once chilled, roll into 1 inch balls and place on baking sheet
- Melt the chocolate (I used a microwave)
- Dip balls into the chocolate and place on baking sheet to refrigerate until serving
- Best served slightly chilled, or I enjoy them straight from the freezer
